How does BART know if I've paid for my spot or not in their paid lots? Do the BART officers have a computer that lets them know which stalls have been paid for?
I'm not trying to beat the system here--just seeing how long I have to hold on to my parking receipt for! I'm paranoid about keeping receipts way longer than I need to, and I'd like to let some go finally.

Okay, so here's the deal.
When you park your vehicle, you need to remember your 3-digit stall number. As you enter the station, you input that 3-digit stall number in the parking machine. It is then "validated." Keep the receipt issued to you by the machine.
When the BART Police CSO's come to the station to conduct the enforcement sweep, they are provided with the stalls that are not validated. They then make their way through the lots and see if there are cars parked in the spots that aren't validated. If there are, that means that either there was a mess-up on BART's part (why you need the receipts), the patron entered the wrong stall number, or that the person evaded payment.
Either way, a citation is issued. If the citation was issued in error, it can be contested with the receipt as proof of validation.
Long story short: you need only keep the recipt until you return in the evening. If there's no ticket, toss it. If you were issued a citation, and it was issued in error, save your receipt so that you can contest it.

Thanks! What happens if I make an error and enter in the wrong stall number? I always have that moment of panic when I get to the Validate Fare machine and think, "Oh gosh--was that 434 or 442?"

"Ok, here's the deal. If you type in the wrong stall number, take your receipt IMMEDIATELY to the station agent's booth and notify the agent. The agent will then do one of two things: 1. Write your stall number in a log that the CSO checks before she cites or 2. Call the CSO directly and advise her. (Some mean agents will make you pay again, considering it a life lesson that you must pay for your mistakes. Most will let you get away with the mistake if it doesn't happen often.)
If you have waited until you return to the station and have already received a ticket, again contact the agent, who will then contact the CSO. If the CSO has already gone home for the day, either an available officer can take care of it, or you can contact the CSO the following day. YOU MUST HAVE YOUR RECEIPT AND TICKET WITH YOU OR NOTHING CAN BE DONE ABOUT IT.
People make mistakes. If you do nothing about it until after the ticket is processed, I don't feel bad for you.
Here's why. Tickets are processed by an outside agency. This outside agency is also the one who decides if your ticket can be dismissed after they've processed it. As they are the deciding agency, BART can no longer do much about it.
Check your stall number before you finish your transaction; it saves you the headache later. If you hit the wrong number, press the "*" key to clear out the digit. And, as always, if you have a problem, tell the agent."

What if they get the list of non-paid, then while they're sweeping, someone parks and goes in to pay?

What happens if that person leaves and another person takes that spot and gets a ticket? I assume you guys know the time the car was validated?

If someone takes a spot then they would proceed into the station and pay for the spot. You get a paper receipt with the time and date. So if you get a ticket you have proof you paid, and what time you paid.
